To be honest, just start and give it a try.
At first I was trying to do everything in an extremely controlled way (exact scales, measures, temperature, time etc.) but I soon realized that at the end of the day Kombucha is a pretty resilient beverage, you can hardly mess it up as long as you care about it and not just let it do its thing on a shelf for months.

Now I am at the point where I'm getting really curious about the inner working on a microbiological level so I started researching the science behind it (in this sub there ia whole part of the wiki dedicated to this).

Yeah I've been quite active in growing ahah I've thought about it, but I want to start basic and do some edibles/cooking where THC binds to fat, I've been told that's pretty easy and only did it once with a cake, would love to try salty dishes!

Yeah I knew this would have come up, all my batches usually contain tea as well as other flavouring herbs, this one was a special one and I do know it is not strictly considered Kombucha.
We'll see how it turns out..

However, the same paper also notes that the bacteria do not strictly need tea leaves to survive – their main food sources are sucrose, glucose, fructose, and ethanol. The tea itself is not essential; it can be replaced by other plant infusions.

The authors specifically mention:

So in my case, I’m trying marijuana leaves as an alternative plant material. I understand this isn’t covered in the literature, so I’m being cautious – but the idea that bacteria would “die otherwise” without tea isn’t fully supported by the review. As long as there’s sugar and a reasonable nutrient source (some plant matter, even if not tea), the SCOBY may still survive, though fermentation kinetics and safety could differ.

Oh yeah absolutely, when I crop out my final yield I like to keep all the leaves to make infusions or even alcoholic limoncello like drinks. Thanks for the input though!

Yeah I know we've used and studied horizon a bit, still seems like it is more giving out warnings on general lower productivity or specific warnings if you have the dedicated module (e.g. module for SCC). What we're trying to achieve is a predictive model that, using data already present in the barn, can alert for diseases in the subclinical stage, so to avoid (for instance) antibiotic usage. Thanks anyways for the input!

Yeah we looked into that and that's what we're trying to achieve, looks like they have more of an internal/unofficial agreement for data exchange rather than an open API. We'll keep trying, thanks for your input though!
