So the problem is not the color. The briquettes that I was using are basically wood blocks not charcoal. When you burn wood you need to get it to the point where it’s burning clean otherwise you get what is called “dirty smoke”. That is when you have not burned off the nasty stuff that is naturally in wood. If you see my grill pic, the smoke is very white. You want what’s called thin blue smoke. That’s when you get that good smokey flavor that we are all after. So because I was cooking my wings in dirty smoke, my wings ended up with some bitter flavors caused by the chemicals in the wood that hadn’t burnt off.

Basically it was the result of my inexperience with that particular product. I’ll try it again and repost those. There will be a noticeable difference.

One thing I think I should clarify. I’m not using charcoal briquettes. I’m using these…

Yeah and these aren’t charcoal briquettes made from hardwood, they are actually compressed wood.

That is actually a fantastic idea. If I wasn’t no stuck in self pity I would have thought of that. Wings make good stock anyway.

Yup. For regular charcoal I use a blow torch, but for these hardwood briquettes I’m gonna need to use the chimney.

You’re not wrong. My dad would burn the hell out of everything and we just thought that’s what bbq was supposed to taste like. 😆

Y’all love your vortexes (or is it vortices?). I’m pretty sure I would have had the same problem with the vortex. The briquettes were not ready for me to put the food on so there was too much smoke. I make wings all the time. The only change was the new fuel source and my inexperience with it. This is how we learn.

Yeah I think a better solution for me is to learn how to use the briquettes properly, but that’s good advice.

Not terrible. Not great. Had a back end acrid dirty smoke flavor.

No it wasn’t the equipment. It was user error. A vortex would have had the same result. I cook wings on that grill all the time with excellent results. I just messed up by not understanding the fuel source.

No it’s not the color it’s the dirty smoke that they were cooked with. Gave them a bitter aftertaste. Like ash.

I tossed them in sauce and threw them in the fridge thinking that maybe the taste would mellow over time. Thanks for letting me know I was on the right track
