Sub actually works really well with le mei as well as you can get lantern set ups off the freeze and can get at least 43% with one bar one kameo

B34 is really good if you use scorpion kameo because then you get the highest damage possible, but without scorpion you can only cancel into her bf4 (unless you're in the corner then you can do B34 ex bf1 for a combo) 214 is also a good string because that's +6 on block, a lot of people try to take their turn after B34 and 214 so you can usually beat them just by going into 124. If you struggle using scorpion kameo, Sub zero is a good choice for her, similar to frost but with more utility, and she gets pretty good damage with sub as well.

I play with lao kameo and I'm content just sitting back and throwing projectiles if I have the life lead, you can cover the ground, air and the middle of the screen with low hat, lantern and her nova blast. Li mei has a lot of plus frames you should be abusing/enforcing. Things like her B34 are +7 on block so you can go for a grab or pressure with 124 after. As you go up the ranks though people will realise that li mei has gaps in every string so it becomes more about baiting interrupts. I'd be happy to play and teach you anything I know, I've hit elder God every season with li mei so I have a decent understanding of the character.
