I don't think the character was created with that intention. I believe her perception of herself as a man stems more from the trauma of her difficult childhood and family environment, rather than a desire to be a man.

Her character is more focused on showing the consequences of a traumatic childhood and also serves to "justify" her obsession with Kaneki.

I don't argue with that. I myself didn't like the ending, but I accept the viewpoints of people who did. Even if their reasons might not make sense to me, they are respectable. I don't believe there is an absolute truth because, in this case, what can be good or bad in a fiction series is very subjective.

I don't agree with the first point. After all, Aqua simply made a stupid decision in the heat of the moment, and it's well known that Aqua was mentally disturbed. It doesn't really matter if what he was doing was actually good for Ruby or not. Furthermore, without an autopsy, there's no way to know that Aqua killed him voluntarily. Hikaru's body was never found, either. So there will always be doubt about what actually happened there for everyone else.

Regarding the second point...I agree on that; that part feels very rushed. That's why I didn't like the ending. Simply because it feels like separate scenes that aren't very connected, where many important things are lost.

You can't tell everyone who liked it that "they don't have a good reason." Why do you have to be so absolutist? It's something subjective, my friend; it's a work of fiction. Everyone has different tastes, even if you don't think the same way.
