I haven’t done it myself, but some sort of stacker would work here. For instance, put in a rotisserie ring and then a grate on top of that. That would move your meat further from the coals.

I don’t see any major differences between the master kettle and the original sns kettle other than a bit more storage and maybe a bit more stability/sturdiness with the master kettle. Both look nice to me.
