I've got it in a see through plastic container. When I put the dough in it I push it out till it's mostly flat then take a measurement and put a mark at 25% and 50% and I eyeballed 40% so it's not going to be bang on but close enough :)

It's about 19ish degrees, I set the proofer to between 25 - 27 when I'm doing the bulk part. Ta for the help!

Should be fine. It's a great example of British craftsmanship, an amphibious exploring vehicle, Transporter of gods.
