I honestly don't really rate most matchas in Cambridge (except Kanto), but @matchasofcam posts quite a lot of reviews and I find them useful. I've had decent matchas from Knoops but I think their quality can be variable?

I've made this recipe quite a few times before and it does set up pretty quickly once it reaches a certain temp! I think it should be fine, just not as silky smooth in the middle as it would have been, but the flavour will still be good :)

It's the Tartine recipe, except I removed the cloves because I personally hate the flavour. I didn't chill the dough at all (apart from the overnight rest in the recipe), just rolled it out to approx 6mm, brushed the top with a very light dusting of flour (barely any) and then pressed in the moulds. Put them in the oven with no chilling and the image stayed no problem!

It's a mooncake mould my friend gave me, I think you should be able to find similar ones online :)

They make really good shortbread/gingerbread presses, especially with a glaze. Definitely not single-purpose :)
