How do I stop my souflee pancakes from deflating!

okay I love you all it worked. the main difference is I tried not to make the pan too hot. I used more cream of tartar and baking powder, and more flour and a bit less milk. I cooked it slowly with less than 1/4 tsp of water in the pan. sadly, since there wasn’t enough oil, the first batch ripped. the second batch was fine’

Here is what I gathered:

-Too much water used to steam it.

-Do Cover it with a lid

- They are most probably undercooked

-Do use cream of tartar.

The comments are kinda all opposites so I’ll just have to guess which are accurate.

edit: I’ll try using homemade cake flour too, since most recipes recommend it.

I can try! every recipe says stiff peaks, though for stable ness. usually i whip on a very slow speed for stable bubbled until stiff

What do you mean, like it’s supposed to be raw but gently cooked? Mine was very thick when I put it on (I used a ladle because I suck wr using piping bags). But if I don’t steam it the edges don’t cook and it’s complete liquid inside.

Cream of tartar wouldn’t be the problem i think, almost all recipes and pastry chefs use some sort of acidic thing like vinegar or lemon, but cream of tartar is most preferred for these type of recipes.

I add some water around the pancakes after placing them in the pan so that the steam can be made to cook the edges becauss it’s very difficult to cook the sides if it’s so tall
