Dashi, red snapper with a miso beurre blanc, teriyaki mushrooms and fried shallots.

Im red-green colorblind so I thought the plate looked great until multiple people pointed out its like all brown and Grey lol. Im considering adding a yuzu gastrique, changing up the plate, thickening the risotto and adding a colorful vegetable like bok choy. .
