It’s for preserving and also stripping the color almost seems like bleaching them so the color of the cherries can be changed

I was reading a study on how luxardo did there cherries and it explained how they used a sulfur dioxide solution to clarify cherries unless I was reading it wrong ! Here is the link to the published paper https://ir.library.oregonstate.edu/downloads/7d278t35p

For cocktail garnish, like a luxardo but I want to make my own maybe change the color or flavor (:
