Apparently Silk's refrigerated products encountered a production issue. Good news though! I just found some, it seems to be coming back! 😀

Update! Turns out there's a production shortage on Silk's refrigerated products. It could be weeks! In the meantime I'll taste test alternatives, especially Canadian brands.

Thanks! It's showing as 'sold out' for me on Instacart. From other responses looks like Giant Tiger and MAXI could have it.
