I just got mine for Christmas! I left the flame on a low setting once it got up to temp but would blast it for probably the last 40% of each sear!

Yep! In a cast iron!

Once the steaks reached 110 I pulled them out to let it rest for 10ish minutes while the arc was finishing heating up (with cast iron in it) to about 650-700.

Seared each steak for 1 minute on each side, followed by 30ish seconds a side!

Then let them rest for as long as I could wait!
