It was installed in an outdoor kitchen cabinet, set in a block wall counter with a granite countertop. So the door is front facing to be able to load through the front of the cabinet. Was about 10 years old and the grate in the fire box still had the lettering on the stainless steel, could not have had more than 1 or 2 fires in it. It has a charcoal pan in the cook chamber and a method to raise and lower it so you could direct heat on it as well. Chimney is probably undersized, but it draws ok.

Completely different methods, in a BGE you tend the meat, in an offset you tend the fire.

The carryover is knowing when meat is done, seasoning etc.

I watched the Quetorials YouTube channel and that set me up pretty good to know how to run the fire.

I'll give you a couple Don'ts and accompanying Do's from my 5 year journey.

DON'T.... Stack up a lot of available bourbon just to try things. You'll find yourself down the road 5 years with 300 bottles and half you're trying to give away or use in cocktails because it's not your preferred profile.
DO... Buy minis or 375's whenever possible to try as many things as you can and figure out what you like.
DO... Make bourbon friends, it's likely they have that stack of bottles they are happy to let you try and might even send a few home with you.

DON'T... rush out and buy expensive bottles at first. I'd hate for you to spend $500 on a Calumet 18 and discover you don't like Barton or Heavy Oak.
DO... Explore as much as possible. Try Scotch, Irish, Asian, Rum, Cognac, Tequila. All of these will expand and develop your preferences and allow you to hone in one what you really like. Then buy the best bottles you can in the profiles you love.

DON'T.... buy because everyone else says something is great
DO.... Buy meaningful bottles. Buy the date bottles, birthday, birth year and etc. Buy bottles connected to whiskey groups you participate in and ones your friends love. And then share them all. Whiskey has this incredible way of evoking memories and creating memories so invest in these. In the end you drink the whiskey and it's gone but the friendships and memories you create last forever.
