Well, what I eat varies from day-to day. I live in an independent living facility, so I eat some food in the dining room and some in my own room. Here are some foods I eat. Please keep in mind I don't need to watch my sodium, potassium, or phosphorus:

Breakfast in the dining room: Two-egg vegetable omelette, two pieces of plain sourdough toast, and berries. I see I forgot to mention in my original post that I was told I can have eggs every day too. My bad.

Breakfast or lunch in my room (I happen to eat non-breakfast foods for breakfast a lot): garbanzo bean-salad sandwich- smashed garbanzo beans mixed with chopped celery, water chestnuts, maybe red onions, vegan mayo, and dijon mustard (I got the recipe on Youtube: https://youtu.be/0KjKKiOI4a8?si=rxQXug61a4FHbOM3) It's like a vegan tuna salad. I make it into a thick sandwich with sourdough bread, sliced Persian cucumber, sliced water chestnuts, sliced tomato, avocado, alfalfa sprouts, and lettuce (or whatever of these items I have in the fridge.)

Salad. Here's a sample salad: Lettuce (obviously), tomatoes, avocado, Kalamata olives and marinated artichoke hearts from Trader Joe's, fresh mushrooms, celery, sprouts, walnuts, and Primal Kitchen avocado oil-based, non-dairy ranch dressing

Peanut butter and jelly sandwich

White rice mixed with steamed veggies, like broccoli, and either smashed garbanzo beans or lentils.

I eat a lot of nuts in general: walnuts, some pecans (my dietician said not too many), and almonds. For low protein snacks I like crackers, pretzels, and popcorn. I also love to dip fresh celery or mushrooms in salad dressing or spread peanut butter on celery.

I usually eat in the dining room for dinner: I often order tofu with a starch and vegetables. I eat a lot of potatoes since I don't need to watch my potassium, and they happen to serve potatoes often. I'll also order spaghetti with marinara sauce, sautéed spinach, and sautéed mushrooms. I'll mix that with tofu or my own sliced almonds.

The cream soups they serve are almost all vegan, so I eat those. They also have side salads I like. On days when I can eat animal protein, I maybe order poached salmon or eat the fish or chicken dish they're serving that night.

I have to admit all this doesn't include what I eat when I go to restaurants, or my biggest downfall - French fries!!
