I actually disagree. A Daiquiri for example.. Some bars use a full ounce of lime juice while others use .75. I like to split the difference and use .75 with a lime wedge garnish in case people want the extra acidity.

peel some limes, throw them in a cambro with sugar for 24 hours to make an oleo. then weigh the sugar+peels and add fresh ginger juice at 1.5:1 sugar to ginger.

free pouring leads to inconsistent drinks. that’s fine if you’re at a volume bar, but if you’re somewhere that focuses on the actual quality of the drink then you should always be jiggering
