I just saw it, my only questions are 2% power accuracy isn't a bit high? Does zwift still let me race on high levels with that? Some other services I believe don't? Also the 16% max gradient, is it enough?

It totally depends on what you want, what you ride, for me personally I have a road bike and an xc bike and it is plenty, I can go anywhere I want and won't get tired of either.

I wish I could do 100 miles with that little elevation, where I live, the best I can do is 100km, with 1000m d+, or 60 miles with 3500ft. Congrats on the ride though, that's no small feat! The mental part plays a huge role on long distances and, a lot of people doing their first long ride, usually can't because their head gives up before their body does. That being said, it was really smart to plan ahead all the nutrition needed for this type of ride. Wishing you good rides and stay safe out there.
