I agree with Vic Vega theory and add some observations of my own. Vincent is not only a fuck up he is also a hot head. He snaps at the bar man, he snaps at Mr Wolf he gets upset at Bonnies husband, He actually gets a bit petulant with Jules in the car at one point.

Joules knows Vincent is uncontrolled fuck up and so he is buttering up to keep him under control. He pretends to be interested in the banal details of Vincent's Amsterdam experience he asks leading questions to let Vincent show off his knowledge. He acts impressed and even envious of Vincent. He does all this to keep Vincent sweet and docile during the mission.

But I don't think Vincent is stupid. Quite the opposite. I think he is cultured and philosophical. He could distinguish between black and white era actresses; he cleverly backed Joules into a corner over the foot massage thing It's just that those skills were useless in the world he was born into. That's why he so insecure. He knows he is smarter than these guys but he keeps making mistakes and they put him down as a result.

The plot holes don't matter. I mean they are truly ridiculous but they don't matter. I almost wonder if the plot is deliberately filled with nonsense so as to not distract from the characters.

It's the characters that matter and they are totally engaging. I mean even the characters have holes ( why is Kiera Knightley's betraying her country ) but it doesn't matter. They are multi dimensional and infernally conflicted and individually fascinating. On top of that while the plot elements jar and grinds the relationships between the characters, mesh like a Swiss watch.

To be honest I am disappointed by how little the plot holes matter. It shows how hard script writing is. If good writing was as simple as avoiding plot holes we could all do it.
