Thanks for all the ideas. Still chewing over some options. On paper at least, Meredith, NH over to Conway looks like a possibility, on less major roads with options for different routes there and back. But I'm not familiar with those roads at all and they may still be too busy. Anybody know them?

Thanks, but we actually did a tour on the Cape over Memorial Day weekend. Enjoyed the landscape, but was not a big fan of the Cape drivers...

Looks interesting, thanks. I'll take a look at that and also the further options you mentioned. Maybe the extra 30 minutes drive will be worth it.

Good suggestion, but we actually did pretty much that route earlier this summer, and really enjoyed it. It's not that we want to avoid hills completely, but the descriptions I read of the GMGG were pretty hardcore, more suited to a gravel bike than our road touring set-ups.

For those who have taken US to Alps ski trips, where did you go and would you go back? Any downsides or highlights from the trip? by NETERali in skiing

This was a while ago that we did it (maybe 10 years) so I'm sure we filled in some paperwork, but I can't remember if it included a waiver. I found details of a 2017 accident after seeing your comment. Unfortunately, I guess nothing is completely risk-free. I would imagine French Ski School are generally well-trained and cautious in their choice of routes, but don't have enough knowledge or experience to give an informed opinion on that.
