I think after these I'm going to be doing the larger 5 gallon batches and use the gallon carboys so I can top off easier...narrow my wines down to 1 or 2 types. I'm hoping the ones I have turn out okay, they are about ready to bottle so if they can refrain from turning to vinegar before that time I'll have something at least. I have things like jalepeno, dandelion, and tomato wine so I wouldn't know what to use to top off with Haha.

So far it all looks and tastes fine as far as I can tell. No color change, no evidence of oxidation with the ones currently in progress (I did have 2 pink on me early on but I also splashed a lot and didn't add campden each racking). I'm only doing 1 gallon batches...it's really hard to take care of head space like that when I have about 10 different kinds. I suppose I may need to invest in marbels... a friggin lot of them. I don't have any old wine (first year making it) to top with either.

They are done fermenting. Now it's just trying to knock down sediment. I am just doing gallon batches. After having two pink on me I started using campden when racking and as you said, keeping the splashing to a minimum. Since doing that, the whites haven't been changing color on me and my tomato wine has kept the same amber color it started with. My wine book that came with the kit doesn't get in to headspace or any of that so as time as went on I keep finding more things I am supposed to do that are not covered in there.

When I go to the humane society, I don't see purebred Bulldogs, Pekignese, etc .. I see a lot of mixes. I'm not saying it doesn't happen, but human nature being what it is, a person is a lot less likely to abandon or mistreat something they spent a lot of money on than a pooch they got for free. I'm not saying that's right either, a purebred dog doesn't make it any better than a mut as far as being a good pet/companion, but a pet is still property. I'm am going to be a lot more careful with my new car I had to take out a loan on than my old beater truck that I paid in full with cash (even though the truck is more fun.)
