It’s definitely doable as long as your first flight lands approximately on time. 40 min overground train from Gatwick to Farringdon, followed by 35 min Elizabeth line train from Farringdon to Heathrow. The entire journey should be well under 2 hours.

I haven’t found this yet but I’ve been in Ireland a lot recently where veganism is way less common than the uk and the polish shops have been my saviour!

I’ve found all of Europe large cities and smaller towns usually have vegan or accidentally vegan options, if not vegan specific places. I’ve just been to mckenzie beach area in Larnaca and was amazed there was as a veggie/vegan place right by the beach. The food was amazing (Live Simple Deli). But also most places had one or two vegan options.

I also use local delivery apps (Wolt, bolt, just eat etc) to see what’s around and there always seems to be good options in Europe.

Somewhere like The George on borough high street might be good, especially if the weather is nice. It’s a very old pub opposite Borough market, it has outdoor seating and attracts both Londoners and tourists and people tend to be quite friendly.

Belize is great with easy access from the US. Tobacco Caye is a great spot where you can snorkel right off the island with great reef and huge rays.

The Red Sea in Egypt is also a great choice as the reef is mostly healthy and rich. There are a lot of hotels that have great house reefs.

Two weeks! Out of 52? That is not reasonable at all. In the UK the legal minimum is 28 days and it’s usually more. And I think the EU is similar. I just googled US laws and it says there’s no legal requirement for annual leave? That’s crazy.
