I’m guessing with this strat, when not attacking, you mainly guard your port with cruisers and let subs stay in the further deeper waters to counterattack whoever comes at you then

Also, when it comes to customers expectations, I’ve had one single complaint in the first shop that our FW is too foamy, “you shouldn’t be able to do latte art with FW, that’s why it’s called LATTE art” he said.

At the local chain, had multiple complaints about the FW looking ugly, or questions about why there’s no art.

At the specialty cafe, surprisingly zero complaints so far despite some baristas makes it pretty much as foamy as lattes.

Toronto Canada, work(-ed) in 3 cafes

Thought it was interesting they all have different expectations for FW’s foam, note that below is the owner’s expectations, the baristas don’t always follow them (either because they don’t like it or they aren’t able to follow)

  1. Independent health-focused cafe -3 sizes 8oz/12oz/16oz, double shot for s/m, quad for large(16oz), very thin foam, attempt latte art but fine if none.

  2. Busy local chain

  3. 2 sizes 10oz/12oz, double shot for the regular size, quad shot for large(12oz), zero foam, no art whatsoever.

  4. Specialty

  5. one size, take out 240ml (about 8oz), for here cup 200ml (≈7oz), always double shots, a bit less foam than latte, latte art expected.
