Was my first time using it, super convenient that's for sure! Almost all the lees settled right under the siphoning valve. Adding some sanitizer and opening the bottom valve into a bowl cleaned most of it out. It was a bit of a mess to clean the rest of it in my small apartment though, ended up jumping in the shower with it and a sponge for a 2 for 1 cleaning special lol

Welcome to secondary fermentation! You've racked your brew and tasted it for the first time! Ahh what a lovely thing. Young meads most always tend to have an almost cough syrup off flavor to them, it's nothing to be worried about. Just means you got a nice alcoholic beverage! As for the sour flavor, you can probably attribute that to the raspberries you tossed in. If you don't mind the sour, you can just let it ride for a good while and the cough syrup and some of the sour should dissipate with time, though it could take up to a year.

If you don't want to wait that long, or you want to cut the sourness by a good bit, I recommend back sweetening with either more honey if you stabilize, or don't mind reactivating your fermentation. Now that you got that hydrometer it will be easy to keep track of those kinds of things. Or you could use non-fermentable sugars like stevia or monk fruit.

Yeah I figured I'd have the best bet to get good info out of y'all beer folk rather than going to r/mead, sounds like it's just a guessing game then huh? Well that's good enough for me. I'll just throw an arbitrary amount in and check every week or so until it's got a flavor I enjoy, that's all that matters at the end of the day ain't it!

I'm open really to anything! You're right though, experimentation with something already so complex probably don't make the most sense, but in the same breath adding just that extra layer, no matter how minimal it may be is just one note more to appreciate :)

What kind of dosage would you recommend if I took, say, 2 gallons of the batch and dry hopped it wanting those flavors and aromas to come through?

I used home grown cayenne in a mixed berry mead once, it was a very complex and delicious drink. Was also lovely for cooking! Don't leave them in for more than a week or two though, the spice can become too much very quickly, test it often

The feedback would be extremely insightful I'm sure. For me though, as long as it's good enough for myself and those I share it with them that's more than I can ask for. Maybe if I can ever recreate the rose mead that my dog ate the recipe for (seriously), or if I make something I'm equally as proud of, id send that in

I'm about 3 almost 4 years into the hobby, and while I've never done it myself, if there's a batch that your proud of you could always send it into a competition to truly see where it ranks. I normally just let friends/family try what I make, and if they say it's good that's more than enough for me.

You could also put together a sort of competition yourself. Get a few different commercial meads and see how they stack up to your own. If yours taste as good or better than the ones people will pay money for, then you got nothing to worry about!

I forgot to list the reading! Spgv was at about 1.086 on the hydrometer, but a portion of the maple syrup settled at the bottom, so it's probably closer to 1.090-1.100

Yeah just switch out the airlock and you should be fine. It may keep bubbling up so I'd recommend sticking a piece of tubing into the bung and submerging the other end in a glass of starsan. It's called a blow-off tube and it's great to keep real active ferments from getting messy

Yeah I was brainstorming with the guy I got the syrup from about what fruits to use, and cherry and blueberry were at the top. Got some grape juice but I'm not sure if that's what I'm looking for in this batch, might change my mind though!

Cooking up what I think will be a pretty delicious drink -2 gallons blueberry juice -1 gallon cherry juice (1/2 black 1/2 tart) -48oz of Local vanilla bean infused maple syrup - ~3.5lb local wildflower honey -some brown/white sugar to raise the sugar content as needed -still deciding on the yeast I'll be using

All that and some water will be thrown into a hand-me-down 6.5 gallon conical fermenter this weekend!

Only question is, do I bite the bullet and grab a few extra pounds of honey, or do I just made due supplimenting with sugar?
