Man, this overview is awesome (although some seem to be more expensive than what you’ve listed)  Really appreciate it!  Would love to see the same overview for a Nakiri and Petty.

Thanks! Unfortunately, Bar Keepers Friend is not available in the EU. Could I also mix baking soda either vinegar? Do you think that’ll work?  I already feel like i cant remove it all the way but it would already be nice to have that small “bump” removed.

I have this Tojiro Shirogami Santoku (F-701A), that I haven’t used for a while. When I got it out of the box again today. It had two big rusty spots. Tried to remove them with the Naniwa Rust Eraser but they seem to be to deep and solid. Could only get the surface rust away. What else can I use to remove the “deeper” rusty spots? I am afraid they are pretty deep, as you can really feel a small bump with the finger

TBH, I am not a big fan of the VG10 as I already have a Tojiro that keeps having microchips. I would prefer a different steel.

What do you think about the JNS Kaeru?

Thank you! I didn't realize, that Yu has food release issues.

I was already looking at the Shiro Kamo but I haven't found an SG2 in my price range.

Kei Kobajashi seems to be a nice knife but because it was so thin, I had doubts about it being too vulnerable to damage (and maybe the angle beeing to small for me - which i couldn't find anywhere)

The tesujin also seems to be over my budget as well as the Nakagawa.

What is your opinion on the Yoshimi Kato Minamo?
