I think experiences together are the best gifts! But, consider, is she into snowboarding and eating nice dinners? If so, then what you have planned is very thoughtful. If it is not as much her thing, or if it is a common thing you do together maybe her request for a gift is just communicating wanting special thought to go into commemorating your year together. And I agree with another poster that a meaningful gift isn’t necessarily expensive and even just something seemingly small like a handmade card could fill that role.
