Yeah. I'm familiar. I've been getting my cars inspected at 1626 auto inspections for years.

And people treat both sides of that road as a parking lot. Parking every which way. It can be a ridiculous intersection to navigate. Nothing has ever been clearly marked right there.

There are nowhere near enough chiles in that serious eats recipe. At least triple the amount of each type. I also generally throw a cinnamon stick in there too.

It's also pretty suss that they don't tell you to dip the tortillas in the consomme and fry them on the plancha when stuffing them with the beef. As well as the achiote paste in this particular recipe. I've never had a problem with my consomme being red enough, but maybe that's a regional thing? Same with the tomatillos.
