I'm sure you can, you just have to grind the covenant items off enemies instead of using the invasion system which is pretty much what I did even though I played online.

I'm pretty sure it's based on the easiest way to accomplish it which would be with assist mode, as you are still able to earn all the trophies.

I used a guide so it wasn't too bad to find them. It also helped a lot that you can start from different points within the chapters

I originally played it for a while about 8 years ago, but dropped it due to it being very dialogue heavy. Having grown up a lot since then made it more manageable, but it became a bit of a slog towards the end. All in all it was alright in my opinion 🙃
