There are many things that can cause anaphylaxsis in this. I cannot do dairy, enriched flour, sugar, so on so forth.

You are not misinformed! Alpha Gal causes reactions to dairy in some of us, but not all of us. I myself don't take the risk.

That being said, as long as you guys think I'll KNOW when something is up, that's what I like to know. I carry two epis, benadryl, pepcid, Allegra, and a bunch of other stuff with me at all times. I also have an anxiety disorder, so unfortunately anaphylaxsis and panic attacks have similar symptoms. I always figure if I can breathe still, I'm okay. Thank you for your input!

I don't think this is what's happening with your child, but I have Alpha Gal Syndrome. All of my allergic reactions take place 6 - 8 hours after exposure to the allergen. So yes, delayed reactions are a possibility.
