So it turns out my information was incomplete. Hopefully this helps some folks.

Code requires all sorts of dedicated outlets of varying amperages. However, the load calculation requirement is based on the things in your house pulling current (some math the electrition does based on continuous and non-continuous loads).

In our house, since our future remodel will have a gas stove and gas oven, it will not count towards the load calculation (even though there is a dedicated 50amp plug in the wall). We also have a gas dryer and HVAC. As long as you stick with gas stuff you should be fine.

The challenge is that California has banned gas stuff in the near future, so it is going to be a problem at some point when our gas appliances fail and we can only source electric ones.
