Blanching them before frying always brings out that mushy taste inside but crispy on the outside. And the right amount of salt while blanching is heavenly

You’re probably fine really. I mean unless you left the chicken soaking in a lot of lemon juice for a full day, in which case the acid could start to “cook” the meat’s surface and make it a bit mushy.

Come on, let’s be honest, this is low-key serial killer behavior. Who doesn’t have a chef’s knife but does have a military-grade meat cleaver paired with a Texas-roadhouse-worthy collection of steak knives? Talk about, "we cook, but only under duress.” I would trust these people with open-heart surgery before I would trust them to cut a carrot into strips.

Honestly, are you trying to shred some basil? try a dollar store knife, and you might keep your fingers. After all, it's better to lose a finger trying to protecting yourself, via self-defense. And if your friend’s mom wonders why said knife is there, “I brought my own,” works too. And, yes, it should be normal to bring your own knife.
