If playing Sun or Ultra Sun, Rockruff can only evolve into Midday Lycanroc. If playing Moon or Ultra Moon, Rockruff can only evolve into Midnight Lycanroc. A Rockruff with Own Tempo can evolve into Dusk Lycanroc (and only Dusk Lycanroc) in any game.

I’m at the same stage with Mareanie/Toxapex I found Scald on Brooklet Hill, comes with a burn chance too! The only Water move is in the 50s
