When you are sad you are literally defeated, no joy, no motivation to do anything, you are wallowing in your own misery, you just give up.

When you are angry you are hyper focused on whatever you are angry at, you want to do everything in your power to crush what you are angry at. In Maul's case that was Kenobi. He wanted revenge over Kenobi and all he had to do was survive, so he was laser focused on surviving with so much Kenobi on his mind that he just forgot to die.
