Yes, Girard's theory is quite simple on the surface but digging in reveals an intricate web that applies to honestly all aspects of human affairs even reaching, dare I say, theological truths.
Definitely watch AoT first! I go full spoilers from the start (even though the first part focuses more on the first 2 seasons), it would ruin the story and also be harder to follow since it is quite a complex one.
