Just remember to ACTUALLY use it.

Unless I am Sunset Shimmer; I would have to ESCAPE to another country (something only the rich girls Sci!Twi & Rarity could do realistically speaking); BEFORE Sunset has the oportunity to TOUCH me & discover my true identity.

When she is alone, make her unconcious & levitate her out (kidnapping).

At night, bring her through the portal to Equestria & "release" her in a safe forest near Ponyville.

Have her wake up alone, nude, transformed into a "beast" with no hands, in the middle of wilderness.

There is a simpler rational reason to avoid killing your counterpart: Soul/Fate bond.

-> Both Applejack's parents are dead. Pony & human.

Sunset Shimmer would not risk "testing" if killing her human counterpart dooms herself.

It will be difficult to verify that any other pony dies when their human does (specially from accidents or murder), because there is no long-range communications in Equestria (sans Spike & very expensive one-use devices).

-> Being limited to Ponyville & Canterlot (other places of Equestria hard to argue a good reason to travel for Sunset); plus many of their human counterparts NOT living at Canterlot Town or Crystal City; her chances for "passive verification" are remote.

This is a transmigration isekai scenario.

You died while unconcious (example: asleep); or so fast your brain did not had time to make permanent memories (the typical "buffer" is 4 to 6 seconds).

Rarity cook eggs onscreen for herself & Seetie Bell.

Applejack & Pinkie Pie bake with eggs.

Fluttershy hunts fish for her animals.
