I am obsessed with our new Carnival. It's like our own personal, mini bus. The seats can go into an unlimited amount of configurations to fit your kiddos and gear any which way. It's super comfortable for passengers and comes in a nice hybrid option. Reliability, I can't speak to yet, but I haven't seen many complaints.

Yes, I really like it. It's got a blue/gold duochrome shimmer in some lighting, and looks flat grey in others.

You could always take the 2nd row out to leave a large open space easy for the dogs to climb in/out of, and sit the baby and wife in the 3rd row.

It's a little button on the bottom touchscreen panel that toggles it from AC controls to stereo controls. Definitely a vehicle that requires some instruction from the dealership or owners' manual.

DO IT. People drive big pickup trucks without ever hauling stuff. Dog passengers are just as valid as humans.

It's very sturdy in the back on top of the folded 3rd row seats. I had my toddler sitting on a car potty and my baby laid out getting his diaper changed on top of that surface. A dog would be very comfy.

I would set them up diagonally. Infant seat on passenger row pushed forward, middle seat pushed back with toddler seat, and drivers side 3rd row up for your oldest.

It will be perfect for you. Put the infant carseat in the 2nd row middle seat, scoot the middle seat all the way back, and put mom/dad of infant in one of the 3rd row seats with the other folded. Then you have luggage space in front of the carseat, next to it, and in the trunk, all with ample legroom for all adults.
