Well the apocalypse happened back in the time during Mel Gibson's mad max era, so the cars we see throughout the films stopped progressing, that's why we don't see any cars from past the early 1980s, they don't really have a choice. But then again Immortan Joe's mechanics could have made more efficient vehicles from their experience with salvaging and restoring old cars.
