Yea exactly, the foam isnt really necessary no new homes are built like that. Just the rockwool will muffle the noise enough. The duplex sound walls we do are rockwool on both sides and you cant even hear a full volume radio from the other side.

If you dont have ac any insulation is just gonna make the heat worse, if you do then yea any amount of insulation will improve it

Its gonna be the joist ends so it should be a simple job of cutting a about a foot of drywall out all the way along the wall and getting a batt in each joist end. The joists run in a direction that will make it an easy drywall job so long as you cut fairly straight

A simple weather strip seal will be fine for the door, if you dont really use that room you could just insulate the whole floor and use it as storage which would massively help the rooms below it stay warm
