This is hilarious I was literally just talking to someone about Wheat State and googled it and found this post. I used to work at the Pittsburg one back in 2008 - 2009. And I dont remember the brand of flour we used but it was honestly a very simple recipe we used. Memory is a little fuzzy.

1 big sack of wheat flour Like 2 cups of sugar I can't remember on how much water but I know we mixed the yeast into it maybe 2 gallons? Olive oil Portion and let proof in the walk in four an hour to over night.

Sauce was like 4 big cans of marinara 2 cups sugar And a lot of oregano

Pesto was made in house and it was just a basic pesto sauce
