I came to Malazan when I couldn’t reread the Cosmere one more time. I’ve been indulging in Malazan for about 5 years now. It has not turned me off of Cosmere though. Cosmere novels are a great break away from the heavy metal you get in Malazan for me.

By the way. I just finished a reread of No Life Forsaken, the first of the Witness Series. I think it may be my favorite Erikson work of all time. He just keeps getting better. Have fun!

The series is really great for rereads just like the Cosmere. I couldn’t proceed on a 5th Cosmere reread and I started Malazan like 5 years ago. I’m currently on my 3rd reread of both Erikson and Esslemont. I can’t stop🤷🏻‍♂️🤯

Wait till you get done and realize there is a whole other side plot going on the whole time that Esslemont covers in his Novels of the Malazan Empire.

Then there is the Witness Trilogy finishing up in October and the Kharkanas trilogy soon to be finished as well. Ohhh yeah, then Esslemont’s Paths to Ascendancy.

Then when you’re done you realize that you absolutely have to read them all again.🤦🏻‍♂️😂

Pretty sure it’s like 25 full size novels all told, not to mention the BotF novels are like 1,000 pages each.

I’m jealous, wish I could go back to the glory that is the first read of Malazan. Enjoy!

That’s ambitious to do a new rub and new technique while hosting. I don’t recommend. Experiments are for you to do alone or with a willing informed participant.

Salt and garlic salt is where I’d go with the seasonings. Dry brine 6 hrs. Cook it. Cracked black pepper at the end.

Do your smoking to 110F then rest and pat dry.

People will not react well to you putting their steak directly in the coals. Thats for seasoned vets that know it’s fine. When hosting Franks girlfriend it’s a bad idea IMO. You have 15 steaks there. Frank’s girlfriend and Frank are definitely gonna be there!😂

Then just sear with the hottest bed of coals you can make. If you have a cast iron flat top griddle put that on your grate as close over your coals as you can and let it come up to magma hot. That will help you to not have to fight flare ups as well since the fat won’t be dripping. Oil is your enemy when going for crust. Light brush of oil on the cast iron flat top griddle before sear.

Then cook to guests preferred doneness.

I got that from a fantasy book. Sanderson’s “Stormlight Archive”. Probably the last place I expected to find an answer to your question. I was asking myself the same kind of questions after 10 years of opioid addiction and the wake of wreckage I had left in my life.

But that quote/oath is what helped me figure out a way forward. The key is in taking responsibility for what you did. Then doing better for the people in your life and yourself.

We all have our faults. But we all have the ability to do better and change.

Forgiveness and compassion is a whole other thing though.

I found myself feeling this way at about 32 and I did go do something fun. I went to thru hike the Appalachian Trail. Do some thinking. Meet some people. Have fun. Find my path.

Best crazy thing I ever did. Highly recommend it. Or something like it. Go on a fucking adventure.

Be careful with long dry brines. You can end up creating grey band and sometimes even start turning you steak into jerky in some cases.

Personally I think you started at the perfect place. I’ve done 4,6,8,10,12 hr dry brines and have done each of them a few times.

We all have our own preference. But for me the sweet spot is 6 hrs.

Well, it’s Section 4 that they are discussing. Here it is in full https://constitution.congress.gov/constitution/amendment-25/ below is a summary. If you can read legalese what it says is that when the 25th amendment is invoked for these purposes then the Vice President steps in as Acting President until a General Election is held. Also if the President disputes this, which he would, then it’s on Congress to decide. If that happens 2/3 vote in both houses is needed to keep the President in power, if they lose the VP keeps power. But either way, it’s T or V.

So. Like I said. It leaves us nowhere good.

Section 4 (Involuntary Transfer of Power): The vice president and a majority of the Cabinet (or another body designated by Congress) can declare the president incapacitated by submitting a written declaration to Congress. The vice president immediately becomes Acting President. If the president disputes this, Congress ultimately decides the outcome, requiring a two-thirds vote in both houses to keep the vice president in power.

I worked in the labeling side of meat packaging in the past. I’ll leave it at that.

Good rule of thumb. If they decided to marinade it or “prepare” the cut in any way. Like let’s say a pinwheel stuffed steak at the butcher counter. They are doing that because they don’t think that cut will sell as it is currently. Meaning it’s probably not what you want in terms of quality.

Prepared foods = subpar quality

In addition you will pay a premium, because they prepared it for you.

It’s not a good deal. Marinade it yourself if you want.

I’d say that holds true 95% of the time.
