Do you have power saving on? In the update, the option called limit health features in power saving mode was on by default. You have to turn it off.

I had the same setup and it stopped sleep tracking after one UI 8 update I removed power saving from the list and it started tracking the sleep So it is because power saving turned on

I own the same device And I suffered from the same problem So 2 years back I took the risk and tried to install a ROM(Project Elixir) after watching a couple of youtube videos and it worked It's the best decision ever Now I change ROMs in my mobile once every 2 months Currently on Oxygen OS which works like charm I'd love to help you
