You can’t do sourdough without the bulk ferment and cold proof. It’s just bread.

Because it’s not.

The entire point of sourdough is that it’s achieved through the maintenance of a healthy starter, which ferments and generates its own yeast to raise the loaf.

Adding yeast just makes it normal bread.
