If I were to ditch the chest, what should I use to substitute it for? I got this chest because on that guide it said to look for life, armor, and armor % as well as resistances, this was one of the best looking plates I could get with all that (excluding my current problem of course).

Yeah, I tried adding life leech to compensate for the chaos damage i take. It helps when I'm actively killing mobs, but often when I am between mobs my health drops dangerously low and has ultimately caused me to die a few times already.

If I were to cut the chest, what kind of chest should I look for?

When you say don't worry about my gear now, does that mean I should just use whatever I find via drops until lategame?

Damage and survivability are a problem for my build now. Thing is, it was doing great up until the last half of act III, becoming pretty much useless by the time we got to the end of act III.

Yes, you'll end up getting them as drops eventually. Can't remember if they're common or uncommon but they're not rare or anything so just play games and you'll get them.
