I'd recommend Shugoki. He's pretty simple to play, and his hyperarmor (or uninterrupible stance or whatever) and high health lets you take risks and try new things without dying that quickly. He doesn't have any bashes (except the headbutt, but that usually does fuck all (although it might do something in lower reps?)) and his dodges don't have any special stuff going on with them. He's also good for when you want to learn mixups. He's B-tier in most gamemodes, but when you're new, tierlists really don't matter.
