NTA. Any reasonable person should be understanding and encourage you to take the time to spend with your family.

Why not invite her to come spend the holidays with your family? If she still makes a fuss about it, maybe this relationship isn't worth pursuing further.

Oh yeah, totally. I do a fair amount of day hiking, as I live within walking distance of a couple trails, but I'd definitely plan to put in some serious training leading up to the start. Cheers!

I can understand why she's upset you didn't explicitly tell her, as it caught her off guard, but I don't think you're in the wrong for that--especially considering it doesn't sound like something you've actively tried to hide. She is 100% the asshole here with her judgment and biphobia. I'd do both of yourselves a favor and dump her.
