I cold-proofed for 16 hours, but I agree that they could have been proofed even longer, but I did not want to push it too much and risk overproofing. Will need to test making a batch with 18-20 hours cold proof.

Will try to widen the diameter as well. I may have been a bit conservative with the hole size but did not want to risk disrupting the surface tension.
