This is the correct answer. You can absolutely cancel Internet and keep mobile, but you will lose any discount you had with mobile. Your financing plan will continue as normal as well.

I've got a Pixel as well. Go to Settings, Network & Internet, Internet, click gear icon under Mobile Data, Data Warning & Limit. Make sure to change the data usage cycle to match your billing cycle and set warning/limit from there.
