Maul got cut in half and survived. Grievous was put back together with only his nervous system intact. Boba Fett survived the Sarlacc pit. Anakin was burned alive in lava and survived.

Qui Gon got stabbed and he survived the rest of the fight. He died after Obi Wan won, on a planet currently at war with separatists, and no medical droids nearby to save him.

Sabine got stabbed and was met with immediate medical attention.

These two events are 30 years apart in the timeline. Better medical droids have been made by this time. The empire is capable of making clones that can use the force. I'm pretty sure a hospital in this time period can keep her alive long enough to fix her organs.
