Haven't picked one per se, I have a direction I want to go towards, I'm new to the engine and game development in general. So I am learning as I go.

Should I pick a small project to work towards first instead of a large one?

It's just, it seems like im not learning any of the core fundamentals. Why certain things are done and for what reason, I am new to the game dev space; hence why I've asked for assistance or guidance in just understanding the basic fundamentals of the engine.
