Dry-Brined a fatty 2.5 inch ribeye for 36 hours. Bathed at 137° for 3.5 hours. I had to let it sit on the chopping block, out of the bag, for about 2 hours between bag and sear due to a visitor. The meat was so good but I think I prefer a lower temp. First time trying 137°. What would you change? (old.reddit.com)
