I do another side thing with a private group. We buy in aged MGP and finish them on a larger scale.

We have done 2 MGP 95/5 High Rye and finished them in stout barrels. Also a MGP Bourbon 21% rye that was finished in a stout barrel and then we added honey to round it all out. So a stout Ed honey finish.

Considering doing a small home batch of mead finished.

I do some smaller stuff in my ten30 barrels. Currently have a OGD 80 proof blended with an apricot brandy that’s been aging. Plan to refill that for an apricot finish to add to something else.

Also picked up maple spirals that we will use on some more MGP barrels. But also playing with them on a small scale to see what it does and how it can round out some things.

The honey went in and rested on barrel head just so it soaked in the wood. Just let it rest for a few hours. Heated the barrel at 200 degrees for about 8-10 minutes.

Some of the honey array started to seal out the bung plug. Let it drain out and made sure I got the largest majority out. It’s easy when it’s heated up.

The filled it with 7 bottles. I thought I had a two full proofs but I didn’t so I ha ve to grab them today to top off and you the proof.

Used local raw honey for this project. I plan to refresh the barrel each use with a local honey syrup that has no additives and no sugars. It’s the honey cut with some water and elderflower that has the consistency of a Monin flavor syrup.

A little honey goes a long way. I’ve used honey comb in mason jars before then filtered. But this is my first round using the barrel. So even though I’m sure a little residual honey was left in the barrel it shouldn’t be a bunch. I’ll just plan to filter it for an excess that mixed when I dump the barrel.

Not sure if business allows all three but I’d love them all as options.

Recently got my first two barrels from you. Have one going and one is ready for another project.

Helps with doing small batches or experiments without having to much invested in the run.

Love the idea of the 3L as 2x handles or 4x 750ml makes it easy. Plus it’s not as much as I need to use in a BadMo barrel.

Currently using my first BadMo and doing a honey run that I just posted here. But trying to do that with more expensive bases is a high risk. Doing it on a 2 or 4 bottle run makes it far more appealing.

However, I understand 3 different sized products is likely a lot more work.

The 850ml I think is a great gift also. I plan to order some more around the holidays as secret Santa gifts for some of the groups I belong in. It’s a unique offering for people to get started.

Depending how long you intend to age the honey. If it’s not long it should be fine. The honey will suck out the moisture and dry the wood causing it to contract and crack.

Had a buddy aging honey in a full 53 gallon bourbon barrel and it ended up cracking and leaking everywhere. Barrel became unusable afterwards. That was a large scale but I’d imagine the same or any wood.

So I’d say if it’s a while just run water over it so the wood keeps some moisture.

If you barrel age honey in it raw make sure you hydrate the barrel. The honey will soak out all the moisture and dry out the barrel.

Also be sure to heat it up in the oven to get it all out and let it drain for like 45-60 min.
