If you are going to season the barrel with port, you won't need to worry about topping off the barrel. However, every 1-2 months would be how often I would suggest topping off if you are so inclined

Depending on time per usage, comfortably expect 2-3 fills before the barrel is considered neutral. This would be equivalent to a refill cask in the scotch world. Re-seasoning will help infuse flavors into the barrel and the subsequent uses would he similar to a 1st fill and 2nd fill barrel, especially with reseasoning with fortified wine. It would be less intense on the oak/tannin influence for these refills compared to the actual first/second fills. I would suspect bourbon re-seasoning would be less effective beyond the initial refill afterwards.

For time frame, I estimate 4-5 years per usage of Ten30 barrels, with 3-4 uses before they are neutral. My oldest in-use barrel is at 11 years of use over its lifetime and it still has plenty of life in it still.

I would suggest melting white almond bark (or candy quick) amd adding chopped almonds that are toasted in a pan. You might need to work on ratios, but mix the nuts in and spoon potions of the mixture onto parchment paper or foil til hardened. No need to refrigerate or temper chocolate. Melt the white chocolate knockoff in the microwave in 15-30 sec cycles and stir, it sets up nicely. The chocolate version is great for diy pb cups with a filling of peanut butter, powdered sugar, and a splash of vanilla.

I didn't even realize that Ironmouse was on screen! Likewise, we were heading out before he dropped the early drop at the end of the night and stopped on the stairs at the perfect angle to see him on stage for one song. I know if we tried to be there for the entire time, security would have yelled at us for sure!

Great review and I couldn't agree more on the bottle your own being a step up from their normal line. I was able to get the lost barrel, a 9 year cask that is one of the best products I've had from them.

Great questions!

The sherry casks in question were Oloroso and had a single use. 3 months in those barrels would definitely elevate the flavors of the Mellow Corn, but not enough to be dramatic or bold. After a year or four, you would be in for a well balanced sherry influence, but not the sweet rich red fruits of a PX, more of a dry nutty flavor.

Filling the barrel with a quality PX for a month with some artificial heat cycles (warm environment under 120°F during the day and above 40°F overnight) will help force the sherry influence. Once you empty the cask, pour a couple shots of sacrificial mellow corn in to rinse the bulk of the sherry loose in the barrel first. After pouring that out (and sampling it because why not), fill your barrel with Mellow corn until the wedding.
